YORK, PA – Billing itself as the world’s first nacho brewpub, Nacho Cabra is returning to the Taste Test Restaurant Incubator for a long-term tryout that brings the perfect pairing of beer and nachos back to Downtown York.

Downtown Inc officials will join Taste Test and Nacho Cabra for a ribbon-cutting celebration at 6:30 p.m. Tuesday, March 13, at Taste Test, 105. S. Duke St., in Downtown York. Media coverage is invited, and the restaurant will be open for dinner.

After receiving strong community support during a two-week pop-up at Taste Test last spring, Nacho Cabra owners Scott Paules and Phil Deren hope a longer stay could jumpstart their quest to open a brick-and-mortar location of their own.

“It’s the perfect combination. Everyone loves nachos and beer,” Paules said. “It’s a can’t-fail business plan if you ask me.”

After working in restaurants through his life, Paules always wondered what he would make if he opened his own place. A fan of his nachos, Paules’ wife told him to forget his other ideas and stick to the chips.

There’s a good reason for that. Nacho Cabra won’t offer the same-old nacho experience. Instead, it will serve single-layer trays of nachos, ensuring diners aren’t left with chips and no toppings at the end of their experience.

Instead, when customers finish, they should have leftover toppings on their tray. Staff will offer “scrapers” to ensure diners enjoy every bit of gastronomic goodness.

Customers will build their own nachos, with available toppings including various salsas, proteins such as chicken, chorizo, ground beef, black beans and queso, cheddar and even goat cheese.

Paules said the goat cheese softens deliciously under the broiler. The ingredient served as one of the inspirations behind the name Nacho Cabra. Cabra means “goat” in Spanish.

The menu will also feature quesadillas, chips and queso, dessert nachos and more.

Deren has extensive home-brewing experience and brings an impressive knowledge of beer after growing up in Germany. Nacho Cabra eventually aims to sell beer made with Deren’s recipes. In the meantime, Taste Test’s bar will offer a selection of beers that pair well with nachos.

“Whenever you can pair nachos and beer, that’s the start of something beautiful,” said Silas Chamberlin, CEO of Downtown Inc, the downtown improvement organization for York. “Taste Test has been a true catalyst for Downtown York’s culinary scene. This is more proof that Downtown York is a place where adventurous entrepreneurs can take new ideas and bring them to life. We invite the entire community to support this cool concept, and wish Nacho Cabra luck in its long-term Taste Test tryout.”

Taste Test is a restaurant incubator that allows aspiring restaurateurs to test their concept with the community. Earlier this year, Hamir’s Indian Fusion became the first of Taste Test’s pop-up restaurants to open its own brick-and-mortar location in Downtown York.

Nacho Cabra is hoping for a similar result.

Paules and Deren both work in the technology field, but they have felt compelled to share their creative culinary creations with the rest of the world.

“We love to share food with people and have that sense of family and friendship,” Paules said. “That’s what we want here. We want Nacho Cabra to be a place where people want to come and hang out with their friends and have a good time. A lot of that bonding occurs over food and drink, and what’s better than nachos and beer?”

Nacho Cabra will be open 11 a.m. to 9 p.m., Sunday through Thursday and 11 a.m. to midnight Friday and Saturday.
